Equipment

Ingredients

Chicken

  • 2 lbs boneless skinless chicken breasts
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder

Sauce

  • cup honey
  • cup soy sauce or aminos
  • 3 tsp garlic powder
  • 1 ½ tsp sriracha (!)
  • ¼ cup ketchup
  • 2 Tbsp cornstarch
  • 2 Tbsp water

Instructions

  • Cut 2 lbs of chicken into 1″ pieces and season with salt, pepper, and garlic.
  • Heat 1 Tbsp avocado oil in a large skillet over medium-high heat.
  • Add chicken to skillet and cook until no longer pink.
  • Meanwhile, measure out sauce ingredients into a large measuring cup or bowl.
  • Once the chicken is cooked through, add sauce. Warm on low until thickened.
  • Serve chicken over rice or vegetables.

Notes

To cook in the Instant Pot, combine all ingredients except the cornstarch and water. Cook on high for 7 minutes. When the timer goes off, quick release the pressure (caution, the steam is hot!). Mix together the cornstarch and water to create a slurry. Add to the chicken and sauce, cook on 'saute' until the sauce thickens.
