

Honey Garlic Chicken

Ingredients
Chicken
- 2 lbs boneless skinless chicken breasts
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
Sauce
- ⅓ cup honey
- ⅓ cup soy sauce or aminos
- 3 tsp garlic powder
- 1 ½ tsp sriracha (!)
- ¼ cup ketchup
- 2 Tbsp cornstarch
- 2 Tbsp water
Instructions
- Cut 2 lbs of chicken into 1″ pieces and season with salt, pepper, and garlic.
- Heat 1 Tbsp avocado oil in a large skillet over medium-high heat.
- Add chicken to skillet and cook until no longer pink.
- Meanwhile, measure out sauce ingredients into a large measuring cup or bowl.
- Once the chicken is cooked through, add sauce. Warm on low until thickened.
- Serve chicken over rice or vegetables.
Notes
To cook in the Instant Pot, combine all ingredients except the cornstarch and water. Cook on high for 7 minutes. When the timer goes off, quick release the pressure (caution, the steam is hot!). Mix together the cornstarch and water to create a slurry. Add to the chicken and sauce, cook on 'saute' until the sauce thickens.
