Healthy Homemade Pumpkin Pie

Equipment
- Stand Mixer or large bowl with hand mixer
- Paddle attachment (if using stand mixer)
- Pie pan
- Measuring cups + spoons
Ingredients
Filling
- 3 eggs
- 1 (15 oz) can pumpkin puree or homemade puree
- 1 cup can full fat coconut milk
- 1 tsp vanilla
- ¾ cup brown sugar
- ½ tsp salt
- 1 tsp cinnamon
- 1½ tsp pumpkin pie spice
Instructions
- Preheat the oven to 425F.
- Prick the bottom and sides of the crust with a fork and bake for 2 minutes.
Prepare pumpkin pie filling
- Combine all of the filling ingredients in a large bowl or the bowl of a stand mixer.
- When the pie crust is pre-baked, pour the filling into the crust and bake at 425F for 15 minutes.
- Reduce the oven temp to 350F and bake for 50-60 minutes, or until the crust is brown and the center of the pie is no longer jiggly.
- Remove from the oven to cool completely, at least 2 hours. The pie will firm up as it cools.
- Refrigerate, or serve as desired!
