Ingredients

Filling

can pumpkin puree
or homemade puree

can full fat coconut milk

vanilla

brown sugar

cinnamon

tsp
pumpkin pie spice
Instructions
Preheat the oven to 425F.
Prick the bottom and sides of the crust with a fork and bake for 2 minutes.
Prepare pumpkin pie filling
Combine all of the filling ingredients in a large bowl or the bowl of a stand mixer.
When the pie crust is pre-baked, pour the filling into the crust and bake at 425F for 15 minutes.
Reduce the oven temp to 350F and bake for 50-60 minutes, or until the crust is brown and the center of the pie is no longer jiggly.
Remove from the oven to cool completely, at least 2 hours. The pie will firm up as it cools.
Refrigerate, or serve as desired!
