Healthy Homemade Pumpkin Pie

Equipment

  • Stand Mixer or large bowl with hand mixer
  • Paddle attachment (if using stand mixer)
  • Pie pan
  • Measuring cups + spoons

Ingredients

Filling

  • 3 eggs
  • 1 (15 oz) can pumpkin puree or homemade puree
  • 1 cup can full fat coconut milk
  • 1 tsp vanilla
  • ¾ cup brown sugar
  • ½ tsp salt
  • 1 tsp cinnamon
  • tsp pumpkin pie spice

Instructions

  • Preheat the oven to 425F.
  • Prick the bottom and sides of the crust with a fork and bake for 2 minutes.

Prepare pumpkin pie filling

  • Combine all of the filling ingredients in a large bowl or the bowl of a stand mixer.
  • When the pie crust is pre-baked, pour the filling into the crust and bake at 425F for 15 minutes.
  • Reduce the oven temp to 350F and bake for 50-60 minutes, or until the crust is brown and the center of the pie is no longer jiggly.
  • Remove from the oven to cool completely, at least 2 hours. The pie will firm up as it cools.
  • Refrigerate, or serve as desired!
