Ingredients

  • 1 lb chicken

Greek Marinade

  • cup olive oil
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp spicy brown mustard
  • ½ cup red wine vinegar (you can substitute up to half white vinegar without altering the taste)
  • 2 tsp red wine vinegar

Pita + Toppings

  • 4-6 flatbread or pitas
  • ½ cup bell pepper (any) sliced
  • ½ cup sun-dried tomatoes
  • ½ cup kalamata olives sliced
  • 2 oz feta cheese crumbled

Instructions

  • Preheat oven to 450F.
  • Combine all marinade ingredients in a glass jar.
  • Secure the lid and shake vigorously. This dressing can be stored at room temperature for a day, but it should be refrigerated for long term storage.
  • Pour over chicken in a baking dish with a lid. Let marinate for 20 minutes-2 hours.
  • Bake chicken for 20-28 minutes until cooked through.
  • Shred or dice chicken.
  • Layer chicken and toppings on pitas or flatbreads.
