bell pepper, red
halved lengthwise, stem/seed core removed

frozen corn
thawed

cored, seeded, and 1/4-inch diced

mango

avocado
peeled, pitted, 1/4-inch diced

can black beans
drained and rinsed

cilantro

Cilantro Lime Dressing

Greek yogurt
1/2
bunch
cilantro
finely diced

minced garlic

Instructions
In a large salad bowl, combine bell peppers, corn, tomatoes, mango, avocados, and black beans.
Add dressing ingredients to a jar and shake well. Add to the salad to your taste and mix well.
Sprinkle with fresh cilantro and chill for 15-30 minutes, covered, in the refrigerator.
